A stunning new bakery with a twist has opened in Bundoran.

Milish is a gluten-free bakery led by cookbook author Finn Ní Fhaolain. She is best known for her cookbook Finn’s World and was diagnosed as coeliac when she was 19 years old.

Though this can be seen as a hindrance to some, Finn felt inspired to create tasty gluten-free options. She is also extremely passionate about sustainability and plant-based recipes which can also be seen in the café.

Aaaaaand that’s a wrap folks. Day 1! We did a very sneaky quiet opening as we had arrived at the finish line (which is actually the starting line 😂) quiet depleted. But the reaction today has been PHENOMENAL! Thank you to all the wonderful customers that came in today so many new faces that we didn’t know from here or @burroburrobundoran we loved how much you guys loved that treats and coffees (sold out of bread in the first hour 😂). We’ll be doing a “more real” day tomorrow and open for about 9.30 with tasty healthy breakfasts & lots of vegan options too (highly requested today) to go and of course delicious @calendar.coffee Thank you guys all again all the messages here have been absolutely amazing, it’s honestly a long term dream fulfilled to open my own little bakery 🧁 . . . . . #milishbakery #cacamilis #glutenfreebakery #glutenfreebaker #sustainablebusiness #sustainablebakery #zerowastebusiness #zerowaste #sustainableliving #glutenfreecake #glutenfreebread

The café has a zero waste policy and is plastic free. They use unloved t-shirts as cleaning cloths, compostable bin bags, and glass jugs for water.

On the menu, expect to see banana bread, delicious porridge bowls, doughnuts, waffles, cakes and cookies.

Hello folks! Thanks so much for all your messages and enquries about our opening date and also about working with us. For now we are aiming to open by the end of this month, as with any build there are always some delays. But we are so so excited to open the doors and meet all the lovely folks we’ve chatted to online. For any work enquiries, we have our full compliment of bakers, but might have space for a part time barista in the summer months, we will keep ye posted on this. In the mean time it’s #coeliacawarenessweek2019 so we thought we’d share a lovely little GF loaf with you guys that @saltwaterstories.me made yesterday. It’s GF, it’s vegan friends and it’s insanely delicious for sandwiches! It’s a “smalted” (pretend malt since that’s not GF) with oregano and sundries tomatoes, topped with poppy seeds, pumpkin seeds and flakes almonds. We had it this morning with miso mushrooms and onions and some oven roasted tomatoes. Heaven! . . . . . #realbread #glutenfree #glutenfreebread #glutenfreebakery #glutenfreevegan #glutenfreebaker #sundriedtomatoes #maltedbread #coeliac #celiac #celiacdisease
