Acai bowls and Greystones – a combination that just makes sense.

After a journey steeped in trial and error to create “the most peng juices possible”, the opening of Roots 2.0 at the Boatyard in Greystones is imminent.

Owners of the hugely popular Monkstown food truck Conor and Dave have been putting the finishing touches on their second location, a mammoth-sized horsebox they’ve dubbed the “Frankenstein of horseboxes”. Plenty of space for filming jazzy reels and juicing up a storm, no doubt.

In a post on Instagram, the team wrote:

We’ve been working very hard behind the scenes to Rootify this beautiful Frankenstein of horseboxes, and bring the people of Greystones some fine superfood smoothie bowls, speciali-teas and a new rooty tooty juicy menu!

The new Roots will be located at the Boatyard, next door to “dangerously tasty” neighbours Burrito Box.

Opening day for the new venture is this Friday from 7:30am, and the duo added that they’re “very much looking forward to meeting a lovely new community”.

Roots are also looking to add some Greystones locals to their team, so if you live in the area and think you’d be a good fit, you can drop them a line at [email protected].

We look forward to paying them a visit!
