I’ve been intrigued by the concept of potato donuts ever since I saw a recipe for a cheesy version of them on TikTok – a recipe I knew I’d fail miserably at attempting to recreate myself.
Luckily, it won’t have to be left up to me as there’s an “end of summer donut popup” happening in Ballydehob tomorrow (Wednesday 24th), with potato varieties on the menu.

Ron D’s, a family-run food truck that foodies travelled from far and wide to visit last year will make its return in the form of the popup, and if you’re a sourdough fan, you should make it your business to be there.
Opened last year by friendly couple Liz and Simon, Ron D’s was inspired by Liz’s dad Ron’s cooking, and food stalls from her home town of Cape Cod, Massachusetts. The result was tasty donuts, delish cheesy sambos with cured meats on their lovingly baked sourdough, and sweet flaky hand pies.

The food truck closed its hatch for good in April, but the duo have held a few donut popups over the summer to keep the people of Ballydehob going.
On the menu at tomorrow’s popup you can expect potato brioche donuts (!) as well as chocolate glazed, pumpkin, cinnamon sugar and blackberry crumble to name a few. There’ll also be cakes and Ron D’s famous hand pies on offer, with gluten free options too.
