There’s A Boxty Festival Happening In Leitrim This October

Most of my extracurricular activities revolve around food and as you all know, I’m a big fan of a food festival.

Especially one involving boxty.

Boxty was always a staple in my house growing up, so I was shook when I got to college and people didn’t know what it was. What sheltered lives they must live.

Let me explain what exactly it is, lest I make the same mistake and assume everyone knows what I’m talking about.

Boxty is a traditional Irish potato pancake. Not to be confused with potato bread, they’re VERY different. Made predominantly from finely grated raw potatoes (we do love our spuds don’t we), it’s best-served piping hot with a knob of butter and some salt.

Mostly associated with counties such as Mayo, Sligo, Donegal, Fermanagh, Longford, Leitrim and Cavan; each region has its own variation. The Leitrim Boxty Festival will celebrate Leitrim’s take on the dish.

Kicking off on Saturday 19 October in Carrick On Shannon, there will be exhibitions, talks, tastings, music, dance and of course lots of boxty.

Organisers say boxty will be available on breakfast, lunch and dinner menus in eateries throughout the town so whether you’re a well-seasoned fan or a novice in search of your first bite, Leitrim is the place to be for all your boxty related needs.
