This tastes like such a treat, you’ll feel like you’re having dessert instead of breakfast. – and better again, if you use coconut yoghurt then you have a paleo friendly meal!
Perfect if you're trying to stay healthy this week but still want to spoil yourself.
All your blueberry crunch ingredients... so healthy!
Get a nice mix of nuts – anything will do, but we went for almonds, pistachios and macadamia nuts which were delicious.
Chop the nuts coarsely, you don’t want them too fine as you need a good bite and crunch to this dish.
Add the nuts to a dry pan for a few minutes to toast on a medium high heat. Watch them carefully as they can burn easily, and you're pretty fecked if they do.
When done, add two tablespoons of honey and a tablespoon of coconut oil, then take off the heat. Stir around for around 30 seconds until well combined.
Wash and dry your blueberries. Your mam would kill you if she found out you were eating dirty fruit.
Spoon your yoghurt in a bowl and top with your blueberries… easy enough.
Top with your honey nuts.
Sprinkle with the bee pollen if you decided to use it.
