They say that too many cooks spoil the broth but the opposite will surely be the case when four of Ireland’s top chefs come together on Friday April 5.
The Rose Hotel in Tralee will play host to executive chef of Dublin’s Marker Hotel Gareth Mullins, Paul Kelly and Ed Cooney of the Merrion Hotel, and the Rose’s very own executive chef Odran Lucey for a night to raise funds for Recovery Haven Kerry Cancer Support House.
To kick things off, the four lads will get a little help from IT Tralee students who will prepare snacks with ingredients sourced from Taste Kerry producers. Ed will then start with a crispy fried hen egg with asparagus and Caesar dressing before Odran serves up a delicious spa crab meat tian with apple, ginger and seared tuna loin.
Mains will include a choice of slip sole meunière by Ed or fillet of Irish beef with roast onion puree and beef rib and foie gras bons bons by Gareth. To wrap it all up, Paul’s dessert course will be a surprise “Tralee Rose” followed by an Irish cheese course.
It isn’t the first time that this talented team of chefs have been in the same kitchen. The quartet worked together 20 years ago in The Merrion Hotel and have remained firm friends ever since. Speaking about the upcoming event, Odran said: “It’s important to us all to give something back, to highlight the good food on our doorstep, the positives of our profession and help our chosen charity.”
Siobhan MacSweeney, Manager at Recovery Haven added “We are absolutely thrilled to join forces with The Rose Hotel and the other amazing chefs involved in this event, as it promises to be a truly memorable night. In 2018, over 3,500 people came to us for help at our three cancer support centres across the county – an increase of 30% on the previous year and a record for the charity so we are absolutely delighted that The Rose Hotel have chosen to help us fundraise in this way.”
The evening will be hosted by Radio Kerry’s Elaine Kinsella with music provided by popular Kerry band Celebration. Prizes on the night include a weekend in the Fairmount St. Andrews in Scotland, with a round of golf, as well as overnight stays at The Merrion Hotel and The Marker Hotel.
