- 4 Slices gluten free bread
- 1 Cup milk (I used almond milk here but any milk you like!)
- 2 Eggs
- OPTIONAL TOPPINGS/ EXTRAS:
- 1 Tsp. Cinnamon
- 4 Strips of smokey bacon
- Mixed berries
- Maple syrup
- 1 Tsp. Oil for frying
- Serves 2 genorously.
This is a seriously addictive recipe. It’s not necessarily healthy, but it is gluten free and dairy free. On top of that this recipe is beautifully balanced in proteins, carbohydrates and some punchy super-fruits bursting with antioxidants and flavour.
However, feel free to make it as healthy or unhealthy as you like!
Instructions
Step 1
If you’re using bacon, preheat the oven to 180. Place the bacon on a wire rack and in the oven for about 10 minutes until deliciously crispy.
Step 2
Whisk the eggs, milk and cinnamon together in a shallow dish. Once mixed, dunk the bread into the egg mix until totally covered. It will get a bit messy so just accept and enjoy!
Step 3
Once you’ve finished with the bread in the egg mix, place the bread into a heated and lightly oiled frying pan. Sizzle on both sides to perfection, this should take about 2 mins.
Step 4
Then all you gotta do is assemble your edible tower of joy. I love berries, bacon and maple syrup but go wild and top it with whatever you fancy.
