Get Back In The Game With This Mega-Healthy Carb-Free ‘Rainbow’ Stir Fry

Ingredients
  • Turkey Breast Meat
  • 1 Red Pepper
  • Baby Broccoli (Or any other green veg)
  • 1 Mango
  • Handful of cashew nuts
  • Soy sauce
  • 1 Red Onion

Making a healthy meal that tastes amazing can be tricky, so I’ve come up with this tasty little treat that is packed full of goodness, but will fill you right up and leave you feeling super-healthy.

As always there are just seven ingredients and this shouldn’t take you more than 20 minutes. It doesn’t get any healthier than this.

Instructions

Step 1

The ingredients are pretty simple and there’s a good chance you’ll have a couple of them in the house already.

Step 2

Chop the red flesh off the pepper.

The chop it in to nice thin strips. There is a cheffy term for these but lets just say strips

Step 4

Peel the onion. Easy.

Step 5

Slice the onion in to nice even size pieces as well.

Step 6

Slice up the chili. If you like things hot then leave the seeds in there. If you don’t like heat then remove the seeds and only use about half of them. You lightweight, you.

Step 7

Chop it all up as fine as you possibly can.

Step 8

Now the key to stir fry is getting some good heat going – you want to cook things fast and not simmer the shit out of it.

Step 9

When the wok or large pan heats up add the chili, onion and peppers to the pan. Lash it in there but keep it stirred as you go along.

Step 10

While the veg are starting to cook quickly prep your mango. This is a bit of a tricky fecker so chop the top and the bottom of it so as it sits evenly on the chopping board.

Run your knife (or a peeler if you are not as confident) around the skin, taking it all off.

Step 12

You’ll be left with a beautiful fruit, but there’s still a big awkward fecker of a stone in the centre.

Step 13

Use you knife to feel your way around the stone and remove all the lovely juicy flesh.

When you have all the flesh chop it up in to nice little strips

Step 15

Pull your turkey out of the packet. You could just as easily use chicken here but I love the texture of turkey. You can also buy a breast and cut it up in to strips but most supermarkets will have it pre-sliced.

When the veggies are getting soft fuck in the turkey.

Step 17

Keep everything on a high heat now and keep it moving using a spatula. That’s why they call it a stir-fry, you know.

Step 18

After about three minutes cooking the turkey, lash in the broccoli (although you could easily use mange touts).

Step 19

Lash in a good swig of soy sauce. This will help everything to sizzle and finish off the cooking. Don’t be shy with the sauce!

Add in the nuts.

Step 21

Finish with the mango and that’s you done. About a total of seven minutes’ cooking time. Whatever you do, don’t cook the shit out of it all and let everything dry out or go all soft.

As soon as you stir the mango in take it off the heat and get ready to serve it up immediately.

Serve it up with all the gorgeous colours and flavours overlapping each other. You da boss.
