Step 2

Lash on a pot of water to boil as your first step. This is for the cabbage and everything will be prepped by the time it gets up to the boil.

Step 3

Slice the peppers in half. Whatever pepper you’re using, you’ll want to remove any of the seeds and the white membrane part. But you knew that already.

Step 4

Slice up the red peppers into thin strips. Dice the garlic into as small pieces as you can, then peel the ginger and slice it up into long stripes. It can be a bit of a tricky bugger so watch out for your little fingers!

Step 5

Grab a few leaves of the cabbage and slice it up into super-thin slices. Then, when the water comes to the boil, lash the cabbage into the water. It will take about 90 seconds to cook at most.

Step 6

Lash on a big wok to as high a heat as you can. None of this is going to take long so be on your toes. Throw in the peppers, garlic and chili first with some oil, and be sure to keep them tossed.

Step 7

Slice up the chicken. The thinner you can slice it the better.

Step 8

After about two minutes of all the aromatic ingredients getting softer (thats fancy chef talk for the peppers, garlic and onions) throw in the chicken and season it all up with some salt and pepper. Push the pepper to one side so as the chicken browns up quickly on the surface of the pan.

Step 9

Flip the chicken pieces over. Should only take about 90 seconds to cook on each side depending on how thin you slice it

Step 10

Throw in the nuts.

Step 13

Toss the whole thing up so as everything is evenly coated and then whip it off the heat, making sure the chicken is cooked through. Start to finish the wok part should have taken about five minutes tops.
