Instructions
Step 1
The key here is getting really good ingredients so splash out on good bacon.
Step 2
Start by popping the potato into the microwave, Depending on the size it should take ten minutes – but if you have more time it could go into the oven for an hour at 180C

Roughly chop the avocado and chilli.
Step 4
Squeeze the lemon on top, add salt and pepper and chop it all up.
Step 5
The baked potato should be soft to the middle. Use a fork or knife to check.
Step 6
Cut the potato in half and scoop into a bowl.
Step 7
This is the assembly stage, so prep everything in one area.
Step 8
Chop the bacon and lash it into the bowl.
Step 9
Grate the cheese into the mix.
Step 10
Chop the chives and add them to the mix.
Step 11
Pop the mix back into the potato skins.
Step 12
Grate a little cheese and pop it on top of the potatoes.
Step 13
Pop the potatoes onto an oven tray and under a hot grill.
Step 14
Scramble the eggs with a little salt, pepper and chives added at the end.

With everything ready, it is time to plate up.
