20 Minute Creamy Mushroom And Bacon Pasta

Ingredients
  • Mushrooms
  • Dry Cured Bacon
  • Fresh pasta (dried also works)
  • Chicken stock cube
  • Cream
  • Basil
  • Onion
  • Garlic

I love creating recipes here thay don’t have any bullshit, can be lashed together in about 20 minutes and which have simple ingredients and boy do we have that with this one. You can throw this together so quickly in the evening when you have little or no inspiration and just want to get fed quickly. You’ve no idea how simple this is and just how good it tastes…

Instructions

Step 1

So with the ingredients, I’d advise buying some decent mushrooms like the chestnut ones in the supermarket. Same with the bacon – splash out and get the more expensive one, as it’ll make all the difference.

Step 2

Lash on a large pot of water and a frying pan. If you are getting flustered at this stage then you’re probably better giving up.

Step 3

Chop up the onion and the garlic into teeny tiny pieces (that is a technical term).

Step 4

Lash them into the frying pan with some olive oil. You want to slowly sweat them for about 3-4 minutes

Step 5

Take the stalks out of the mushrooms.

Step 6

Slice the bastards up nice and fine.

Step 7

When the onions are soft, fuck the mushrooms in and crank up the heat to the max. Keep them tossed.

Step 8

When the mushrooms are starting to take on colour, lash in the sliced bacon.

Step 9

Throw the pasta in as well at this stage. Probably only takes about 2 minutes depending on what it says on the packet. You could use dried pasta but this is quicker and it’s all about speed in the evenings, I find.

Step 10

When the bacon is starting to colour up, add about a good mug full of cream.

Step 11

Slice up the basil as thinly as you can.

Crumble in about half the chicken stock cube – this just helps with the seasoning and the overall taste.

Step 13

When the cream is coming to the boil, turn it down and stir it around. It will start to thicken up straight away. You want it to have a thick sauce-like consistency.

Step 14

Strain the pasta and fuck that into the sauce, and stir it all up. If it is too thick at this stage add a tiny bit of water to thin it out.

Step 15

Lash in the sliced basil at the very end so as it stays nice and green. Stirring the pasta into the sauce is essential so as you get it all coated nice and evenly.

Step 16

Serve it up straight away and marvel at the new found insane cooking skills you have. Fucking delicious!

People think cooking is some big complicated process that takes hours to do, and that food like this is only something you’d ever eat in restaurants. This completely dispels that myth. Best part about this one is I usually make enough for the next day so as I can take it work with me and fuck it into the microwave as well.
