7 minute brunch with garlic prawns, avocado and chilli

Ingredients
  • Avocado
  • Pre Cooked Prawns
  • Lemon
  • Really Good Bread
  • 1 Red Chilli
  • Garlic
  • Coriander
  • Chilli Cheese

We’ve all gotten into the habit of going out for brunch but there is absolutely no reason why we can’t be making it at home and having it turn our just as nice (and far cheaper) than the fancy cafes and restaurants we all go to. Sometimes not having to face the world and just lashing on your PJs is far more enjoyable than eating out. I made this dish from start to finish in 7 minutes and as you can see it could grace any restaurant menu. Works just as well for a midweek snack as well. Absolutely epic tasting.

Instructions

Step 1

The key here is that there is very little cooking involved. Make sure to buy cooked prawns and also make sure to splash out on the best bread you can get. Sourdough is best but as long as it is something fancy

Step 2

Peel the avocado. Again if it is one of those hard unripe ones don’t even bother. The supermarkets can be fuckers with this but they’ll always have a few good ones somewhere even if you have to pay more.

Step 3

Cut the bastard in half and remove the big stone.

Step 4

Chop it up roughly.

Step 5

Lash on the juice of half a lemon. This helps with the flavour but also makes sure it doesn’t go all manky and brown.

Season it up really well with salt and pepper.

Step 7

Cut the chilli in half. If you are being a big girls blouse take out the seeds from the middle. If you want extra heat leave them in.

Chop them up nice and small.

Step 9

Chop up the coriander as well. Doesn’t have to be super precise. Rough as fuck will do just grand.

With all the ingredients in there just run your knife through it on the chopping board.

You don’t want it to be too small. Just rustic and making sure all the deadly flavours are mixed through

Slice a couple of pieces of bread as thick as you can for your toaster.

While they are toasting grab the garlic and the other half of the chilli.

Chop the shit out of it.

Lash on a small frying pan and heat up the garlic and chilli

Lash the prawns in and all you are doing here is warming them up as they are already cooked. When they warm up lash in the coriander.

Big squeeze of the other half the lemon

Whip everything off the heat and that it you ready to assemble! So easy!

Start with the bread and a good big smear of avocado. The more the better.

Lash the prawns up on top

Just tear a couple of pieces of the cheese up on top and it will melt in naturally from the heat of the prawn.

Top with more avocado and the remaining prawns and there you have it. An incredible snack or brunch dish ready in no time.

Cooking doesn’t really get much easier than this. Just don’t be a tight bastard and try and skimp on the bread because that is the bit that really makes it. You can play around with it like taking out the chilli and adding something else like onions or tomatoes but the heat is crucial if you ask me. Get your lazy hole out of bed, run down to the shops and lash this together, you won’t regret it.Cooking doesn’t really get much easier than this.
