lovinmanchester

Ingredients
  • Cabbage
  • Leeks
  • Potatoes
  • Garlic
  • Onions
  • Small pasta
  • Chicken stock

The weather has plummeted recently as we experience a cold snap. That inevitably leads to people coming down with the flu which is what happened to me recently. Rather than wallow in my man flu, I decided to tackle it straight on with some awesome, wholesome foods with loads of ingredients to make me better. Never mind any of your fancy antibiotics… A big bowl of this and you’ll be laughing!

Instructions

Step 1

The beauty of this soup is that the ingredients are so cheap and simple to find. You can make a shit load of it in a huge pot and have loads to do you for a few days.

Step 2

Start by slicing up the onions and chopping up the garlic.

Step 3

Lash them into the biggest pan you have with a little olive oil over a medium heat. You want to cook these nice and slowly to extract all the awesome flavours.

Step 4

Slice the leeks lengthways and ditch the green bits. There is a good chance there will be grit or sand in the leeks so give them a good wash under cold running water.

Step 5

Slice the bastards up.

Step 6

At this stage the onions should be softening up and filling the house with their amazing aroma. Lash the leeks in.

Step 7

While that is cooking prep the cabbage. Cabbage is packed full of goodness and is absolute key to this recipe. Peel away the outer shitty leaves and keep the nice ones. Layer them up on top of each other and slice the cabbage as thinly as you possibly can.

Step 8

Layer them up on top of each other and slice the cabbage as thinly as you possibly can.

Step 9

The leeks will have sweated down to about a quarter of their size and they’ll be nice and soft so throw the cabbage in on top.

Step 10

While that is cooking, peel the potatoes and cube them up. Lash them in on top of the cabbage and leeks

Step 11

Top the whole thing up with water from the tap… Hopefully you don’t have a meter in yet!!!

Step 12

Lash in a couple of cubes of the chicken stock. You could use fresh stock but lets be realistic here and say that 99% of us are not going to have fresh chicken stock!

Step 13

When the water comes to the boil throw in a good handful of pasta. You could use any shape you wanted but the smaller the better as it’ll cook quicker.

Step 14

When the potatoes and the pasta are cooked add a bit of salt and pepper and pull it off the heat!

Step 15

Serve it up and that bowl of soup if going to do wonders for your body! Keep going back to that pot to top yourself up as you get hungry throughout the day! Yumsies.

This soup just gets better after a day or two, so keep it in the fridge and heat it up as you need it. Add in a big dirty slice of bread and you have a meal right there… Go on give it a lash!
