Date Night Sexy Swordfish With Sweet Red Peppers

Ingredients
  • 2 Swordfish steaks
  • Parmesan cheese
  • Pasta (whatever shape you like really)
  • Basil
  • Rocket
  • 2 Red Peppers
  • Garlic

When it comes to cooking for a date there are so many unknowns…do they eat meat? Would they like fish? Are they allergic to anything? Are you going to get your end away? I’d never go with something like salmon or prawns because there is just too high a risk that people won’t like them so the key is coming up with a safe option. This is it. Swordfish is super meaty in texture (very much like a steak) and the sweetness of the peppers are devine. Best part is you can lash most of this together in advance leaving you free to make yourself look stunning, dim the lights and crank on a bit of Barry White. Give this a lash and you might well be getting the lash yourself…

Instructions

Step 1

Everything here is super simple to get apart from the Swordfish. Most supermarkets have it now or head to a good fish monger. Fresher the better.

Step 2

Chop the shit out of the onions and the garlic. Fine as you can

Step 3

Lash them into a frying pan on a nice slow heat. Bit like riding later on the slower the better.

Step 4

While those are cooking grab the red peppers

Step 5

Slice them up as thin as you can. You only want the red flesh none of the white bits.

Step 6

Fuck them into the frying pan with the garlic and the onions. Now you want to slowly sweat these down and extract the flavour out of them. More or less the lowest setting and stew them down for about 20 minutes so as they sweeten up.

Step 7

While that is going on take the swordfish out and let it come up to room temperature. Lash a bit of salt, lots of black pepper and a good lashing of olive oil

Step 8

Grab the basil and pick the leaves away from the stalks.

Step 9

Slice the basil up as thin as you can. Don’t be shy with it either. I used pretty much the whole bag. This is where the fresh flavour of the whole dish will come from

Step 10

Your peppers should be looking something like this now. Not burning or taking on any colour but super soft, sweet and full of flavour

Step 11

People get terrified of cooking fish but it really couldn’t be much more simple. Lash a griddle pan (or frying pan if you don’t have one) on to a seriously high heat. YOu don’t even need oil in it. Throw the fish on and cook it for about 3 minutes on each side. No arsing around with it or flipping it every two minutes. Simple

Step 12

Lash in the pasta at this stage too. Not going to tell you how to cook pasta because if I need to do that there is something seriously wrong

Step 13

Grate a good big fistful of parmesan cheese, YOu should have the basil, rocket and cheese ready to go. These are for finishing the pasta with. I’m using little micro rocket (you’d get it in poncy fancy shops) but regular rocket will work just as well.

Step 14

Flip the fish over. See nothing to be scared about here and if you’ve done it right you’ll have those lovely griddle marks on it.

Step 15

Strain off the pasta and fuck it in with the peppers which will be lovely and sweet at this stage.

Step 16

Throw in the basil.

Step 17

Take the pasta off he heat (you don’t want to overcook it) and lash in the rocket. There will be enough heat in there to wilt it down

Step 18

Fuck in the grated parmesan and season with salt and pepper

Throw the pasta on the plate in the middle in a nice little pile

Lash the fish up on top. Now it couldn’t be much easier than that and it should look amazing and make your date think you are a professional chef! Everyone is a winner!!!

So there you have it. Looks absolutely fucking gorgeous even if it is just a bit of pasta with a lump of fish thrown on top. Very little work in this and if you follow the instructions and don’t make a balls of it then it should do the trick!
