- 1kg of potatoes

- 100ml cream
- 3 spring onions
Mashed potatoes are a must for Christmas dinner, but a lot of people are put off by the idea of them.
Here's a super easy to accomplish recipe for mashed champ that's sure to be a winner not just today, but at every dinner party.
Nothing fancy needed to make the perfect mash.
Peel your potatoes and chop them into roughly equal chunks. Place them into a large pot of well salted cold water and place a lid on top. Turn the heat up to high and bring the water to a boil then reduce to simmer.
The potatoes are cooked when they can be cut easily with a sharp knife. Drain them off and leave them to steam in the colander for about five minutes.
Place them back into the pot and add in the butter and cream. Get out your potato masher and give them a good going over.
Be careful not to mash for too long though, as soon as they are broken down stop mashing. If you work the potato starch too much it can start becoming tacky and sticky. Next slice up the spring onions and mix them into the potato.
You're now good to go. Easy, right?
