India’s Healthy garlic mayo

Ingredients
  • 1 Egg
  • 3 Teaspoons Of Lemon Juice Or Red Wine Vinegar
  • 1/2 Cup Of Coconut Oil, Melted
  • 1/2 Cup Of Olive Oil
  • 2 Cloves Of Garlic
  • Pinch Of Coarse Salt

We’re always on the lookout for healthy versions of our favourite bold foods and India has come up with the perfect treat – a super easy healthy garlic mayo.

Instructions

Step 1

The ingredients are fairly straightforward.

Add the egg and lemon juice/vinegar to the food processor and blend until combined.

Step 3

Combine the oils. Then very slowly add the oil in to the egg mixture gradually on low speed (this is very important!). It should take about a minute for you to pour in all of the oil. You’ll notice it thicken with each addition and when all of the oil has been added it should be thick and glossy.

And voilà, it’s done!

It takes a minute to make and is unreal on just about anything. We’d recommend some homemade sweet potato fries.
