We live in a world where everybody is obsessed with eating protein after workouts to help rebuild muscle and aid the recovery process. Eggs are one great way of getting that protein into the body but they can get really fucking boring after a while so I decided to come up with a great little post work out recipe for you. Get stuck into this and you'll never think of omelettes in the same way ever again. Seriously whopper taste off this.
You'll find everything you need in pretty much any local shop. Nothing out of the ordinary here.
Slice up the red onions, nice and thinly.
Grab the sugar snaps and slice them up. These are usually so thin you won't even need to cook them, and they add an amazing crunch!
Crumble up the feta and have it ready to go.
Zest the lemon using a grater, and then the prep is pretty much done now!
Crack the eggs into a bowl, throw in salt and pepper and mix it all up with a fork or a whisk. About 3 eggs a portion is perfect!
Get a large non stick pan on the go. Throw in the onions and the sugar snaps and cook them over a medium heat for about 2 minutes.
Slice up the smoked salmon or even just rip it with your hands.
Grab the stone out of the avocado.
Slice the bastard up into even sized chunks, and squeeze the lemon over the top of it.
When the onions are softening up, get ready to make the omelette. Make sure you have a nice plastic spatula ready to go as this is an essential tool in the process. A wooden spoon is the next best option.
Turn the pan up to the highest heat possible. This isn't going to take more than 2 minutes to cook. Pour the eggs in and swish them (technical term) around so as they cover pan evenly.
Use the spatula to make sure the edges aren't sticking. You'll see the omelette starting to cook from the bottom up.
Lash on the smoked salmon just as it starts to firm up. Make sure to spread it around evenly as well.
Crumble the feta on top and fuck the avocados around liberally and then it's ready to serve.
You can scoop it out and double it up like a traditional omelette or basically figure out how you want to eat it yourself! De-fucking-lish as they say in the business!
Doesn't really get much more simple and quicker than this. You can even avoid the awkward flipping part that turns most home cooked omelettes into scrambled eggs. Throw the pan in the middle of the table and let everybody get stuck in themselves! Go on and give this a go, tastes amazing!
