- Red Peppers
Cooking midweek can be quite the struggle, particularly when it's becoming increasingly more easy to get your hands on takeaways and convenience meals nowadays...
This is a really quick dish, and will fill you up in a much healthier way than a 3 in 1. Not only is this dish sweet, meaty and tasty but also absolutely fucking gorgeous. Go on - give it a lash!
The ingredients are super simple so you really have no excuse not to make this.
Start by peeling the shallots and slicing them up.
Peel and chop the garlic up as thinly as you can.
Lash on a large frying pan and very slowly cook the garlic and shallots in some olive oil slowly.
Grab the red peppers.
Chop the flesh away and then slice it into as thin slices as you possibly can.
At this stage the garlic and shallots will be smelling fucking awesome.
Use a knife to grab the little yucky bit out of the tomato - nobody wants that in their sauce.
Slice the bastards up into quarters and them remove the watery bits, leaving you only with the flesh.
When the peppers get super soft you can lash in the tomato flesh.
Cook the mix down slowly - you'll see a sauce starting to develop just like magic.
Grab the chicken out and fuck a little oil, salt and pepper onto it.
Lash a griddle plan on, making it as hot as you possibly can and lash in the chicken.
The sauce should be smelling, looking and tasting absolutely fucking gorgeous at this stage.
Grate the parmesan.
Flip the chicken - it should take no more than 2-3 minutes on each side with the pan that hot.
Lash the pasta into a pot of boiling water.
Season the sauce up with salt and pepper.
Strain the pasta and lash it into the sauce.
Lash the grated parmesan in. This will bring the whole thing together perfectly
Whip the chicken off and fuck it into the pasta.
The whole thing will be looking as good as this and you can pat yourself on the back for creating not only dinner for today, but tomorrow's lunch as well. Epic.
