The Protein Stack – A Healthy Burger For Cheat Day

Ingredients
  • Chicken breast
  • Sweet potato
  • Brown bap
  • Avocado
  • Red Peppers
  • Feta Cheese
  • Basil
  • Lemon
  • Aged balsamic

One thing people always ask me for is a healthy burger, which is an oxymoron if ever I’ve heard one, but I decided to rise to the challenge with this one.

This is packed full of protein and perfect for a ‘cheat day’, if you want carbs but still want to stay relatively healthy.

It only takes about 30 minutes to make as well, so go on and give it a lash.

Instructions

Step 1

The ingredients are all super simple to find. Rather than normal balsamic, you’re looking for a nice thick syrupy one that’s aged. It’ll cost you a bit more, but it’s awesome as you can throw it on anything as a ready made sauce.

Step 2

Peel and slice up the sweet potato.

Step 3

Slice the feckers up and throw them into an oven tray with a bit of salt and a slash of oil.

Step 4

Throw them into the oven at about 200 degrees. They should take about 20 minutes, but keep an eye on them so they don’t burn.

Step 5

Slice the flesh away from the stalk. You only want the red flesh from the pepper so trim away any of the unwanted white bits.

Step 6

Slice them up nice and thin.

Step 7

Throw them into a pot. Now the key here is to cook them nice and slow so they get sweet. Keep them on a nice low heat and keep them stirred for about 15 minutes. There’s no rush here.

Step 8

Peel the avocado. Buy one of the more expensive ready to eat ones, rather than the crappy ones the supermarkets try to palm you off with.

Step 9

Remove the stone and slice it up.

Step 10

Season them with a little salt and then squeeze lemon over the top. This is to keep the colour and also to help with the flavour. If you didn’t do this it would go black within minutes.

Step 11

Slice up a tonne of the basil leaves.

Step 12

Now you want to slice the chicken breast up as thin as possible, so run the knife through it at an angle.

Step 13

You should get about 3 pieces out of the breast. Put a nice big drizzle of olive oil and some salt over the breasts.

Step 14

Throw them into a hot chargrill pan, the hotter the better. A frying pan would also do, but you want those nice grill marks and the extra improved taste you get from the chargrill pan.

Step 15

Throw the bread into the toaster, I got a nice sort of wholegrain bap – hard to find but worth the effort.

Step 16

Flip the breasts. They should take more than about 3 minutes on each side to cook.

Step 17

At this stage the peppers should be super soft and sweet. Crumble in the feta cheese and the chopped basil.

Step 18

Mix it around gently. This is going to provide the amazing flavour in the burger.

Step 19

Whip the sweet potatoes out of the oven, They should be nice and soft at this stage. Thats pretty much everything ready now and time to assemble this beast.

Step 20

Lash a good squeeze of the balsamic into the bap. Don’t be shy.

Step 21

Throw on the pepper and feta mix.

Step 22

Lash in the sweet potatoes, the avocado and another big lash of the balsamic over the top. You can see how good this is going to taste.

Pop the lid on it and serve it up immediately.

Healthy eating doesn’t really get much better than this! Look at the fecking thing! It’s the ultimate stack of yummy goodies.

You could swap turkey in there as well and mix it up a little if you want a variation. Time to jump into the kitchen and get cracking on this beauty. Your taste buds will thank you.
