Warm Potato Salad With Smoked Salmon And Capers

Ingredients
  • Smoked salmon
  • Coriander
  • Capers
  • New potatoes
  • Cream cheese
  • Lemons
  • Red onion

I came up with this dish for one of two occasions.

On the one hand, it could be for when you come home from work in the evening, wanting something tasty but quick. On the other hand, plate it up with a little more finesse and it makes the easiest but tastiest little dinner party starter you could ever imagine.

No fancy cooking techniques needed here but the end result is absolutely spectacular!

Instructions

Step 1

You’ll find most of these ingredients in all good shops or supermarkets. I’ve heard lots of people say they don’t like capers, but trust me, they add a great balance to the flavour.

Step 2

Lash the new potatoes on to boil. They shouldn’t take more than 15-20 minutes and you can prep everything else while they cook.

Step 3

Peel and slice up the red onions as ridiculously thin as you possibly can.

Step 4

Grate the zest of the lemon. Just the yellow part of the skin and not the white, as it’ll leave a bitter aftertaste

Step 5

Chop up the coriander as thin as you can. I lash the stalks and all in, because they’re tender and have heaps of flavour.

Step 6

Strain a good handful of the capers and have them ready. All these ingredients together will make for an incredible dish.

Step 7

When the potatoes have cooked and are soft to the middle (check using a small knife) strain them off and allow to cool for about three minutes. You don’t want them absolutely piping hot; just warm will do. Slice them up and pop them into a large bowl or tray with a good big spoonful of the cream cheese. Don’t be shy with it!

Step 8

Lash in all the ingredients you had prepped along with the juice of the lemon. Mix it all up properly so as everything is nicely combined.

Step 9

Scoop the mixture onto the plate as a starter portion, or if it’s a more casual dinner situation then throw it in the middle of the table instead. You know best!

Step 10

Pop the salmon up on top, cut into thin strips to make it easier for people to eat. Then sit back and enjoy people’s faces as they tuck into your gorgeous creation.

That dish is something you’d expect to get in a decent restaurant or high end cafe and pay a tenner for.

The beauty is if you shop wisely you’ll be able to feed four for that tenner while doing it in the comfort of your own home! You have no idea how good this tastes either… get stuck in there.
