Whip Up This Delicious Flu-Destroying Superfood Soup

Ingredients
  • Potatoes
  • Kale
  • Onions
  • Ginger
  • Garlic
  • Chicken stock (or veggie stock)
  • Thyme

The weather is getting seriously cold, and we’re spending most nights out partying for the Christmas season – and that combination means the flu is never far away.

I wanted to come up with a recipe that would help fight off any illness and pack the body full of goodness. This soup is incredibly easy to make and a large pot of it will keep you going for a few days – and most importantly, it tastes delicious.

Instructions

Step 1

The ginger, garlic and kale will do wonders for the body. If you can’t find kale then spinach or even cabbage would do similar job.

Step 2

Dice up the onions and the garlic as fine as you can.

Step 3

Lash them into a large pot with some olive oil and sweat them off slowly extracting all the flavours.

Step 4

Peel the ginger and dice it up. Be super generous with it. You’ll also want to pick the thyme leaves away from the stalks.

Step 5

Add them into the pot with the onions and the garlic. Keep it all stirred at all times.

Step 6

Peel and dice up the potatoes. This will give the soup a nice natural thickness and the body all the goodness it needs.

Step 7

When the onions, thyme, ginger and garlic are soft (and smelling amazing) lash in the potatoes and cook them for another couple of minutes will stirring all the time.

Step 8

Pick the kale leaves away from the stalks.

Step 9

Cover the pot with water and bring it up to the boil.

The soup will take about 20-30 minutes to slowly cook. Leave it simmering. About half way through add in a couple of chicken stock cubes, or if you want it to be 100% veggie then go with vegetable stock.

Step 11

When the potatoes are soft (after 20-30 minutes) add the kale into the soup. It will only take about 2-3 minutes to cook and you want it nice and green with a slight crunch.

Step 12

Whip the soup off the heat. Season it up with salt and pepper and taste it to make sure it is just right.

Serve it up piping hot in a large bowl with bread for dipping…

Lash a load of it into you for a few days and the body will have all the nutrients and goodness it needs to keep you fighting fit and ready for those endless Christmas parties. Get stuck in!
