Whopper Tasty Vegetables

Ingredients
  • 1 Packet of baby carrots
  • 1 Bunch of thyme
  • Parmesan cheese
  • 1 Lemon
  • 1 Packet of long stem broccoli
  • Some thyme leaves

You are probably like me in that you know you have to eat vegetables but it can be a massive pain in the ass to get your five a day into you. I use juices to bulk up on fruit because they actually taste nice as well as being good for you but veggies can just be so bland and really fucking boring. Until you taste this simple recipe that is! The key is getting the nice baby carrots which you’ll get in most fancy shops and supermarkets. These are so good that you could eat a plate of them on their own as a meal but I find they are best served up with a nice piece of grilled fish or meat. I’m telling you that you’ll be stunned when you taste these. Absolutely whopper.

Instructions

Step 1

The ingredients are massively simple and it won’t take more than half an hour to make these. Splash out a bit and get the really nice organic baby carrots.

Step 2

Chop the green stalks off but leave a little there as it looks pretty and shit for presentation

Step 3

Don’t peel them with a peeler as you lose loads of the nutrients that live just under the skin. Wash them with cold running water and then just gently remove the skin with a sharp knife.

Step 4

Pour a good amount of olive oil over them and a good few of the thyme leaves. Only use fresh thyme for this.

Step 5

Season them up with a good bit of salt and pepper. Toss them all around and lash that into the oven at 180C for about 20-25 minutes giving them the off toss.

Step 6

Bring a pot of water to the boil and lash in the broccoli and cook it for a max of about 90 seconds to 2 minutes.

Step 7

Whip it out of the water and cool it down immediately with cold running water.

Step 8

Take the carrots out. They’ll be nice and sticky and sweet.

Step 9

Lash the broccoli on to the tray and grate the zest of the lemon on to them.

Step 10

Squeeze the juice of the lemon onto the veggies. Toss them up in the tray and fuck them back in the oven at 180 for about 4-5 minutes.

Step 11

Take them out and grate a little of the parmesan on to the veggies. Toss them up and make sure to keep the absolutely delicious cooking juices to pour over the top.

Step 12

Serve them up all layered on top of each other. Have you ever seem more fucking mind blowing colours?

So that is one of the simplest ways you’ll ever find of getting maximum flavor into your veggies. These are perfect to serve up as a side at a roast dinner or even as a cold salad or with a BBQ. Watch people’s faces light up when you carry these out to the table and they see all the colors. Who said veggies had to be boring? Get your whopper veggies going today!!!
