Here’s a feelgood story to help us all start our Monday off on the right foot.
Well-known Galway cafes Mr Waffle and Ground and Co have banded together to help feed medical staff working on the frontline, setting up a GoFund Me page to raise funds to cover the cost of lunch.
Located directly across from University Hospital Galway, Mr Waffle is a popular stop-off point for nurses and doctors on their break.
Organised by business owner and entrepreneur Kevin Nugent, the fundraiser has already managed to rack up several thousand euros in just a matter of days.
Originally hoping to reach the €500 mark, the generosity of locals has blown the starting target out of the water – with the GoFund Me now having raised almost €6,000.
The idea came about when Kevin got an email from a woman wanting to put money behind feeding staff. Knowing that there would be many more who would love to help out too, the GoFund Me was born – lifting people’s spirits with some positivity in the process.
“People can donate any amount they wish and we will put this towards providing lunches for frontline doctors and nurses across in UCHG. So far we have raised €200 from donations from people who have called so now we have decided to set this page up.
It will be a double act of kindness as we hope we can keep open for a little longer in these uncertain times we are all facing.”

This was coupled with gathering surplus food and bringing it to the Galway Simon Community. Staff at Ground and Co, though a little further away out in Salthill, have also made sure to do their bit – staying behind to prep platters of sandwiches and pots of soup to bring to charities and people in isolation.
