With the Irish summer in full swing, and despite being on a health buzz, I found my mind drifting towards ice creams, desserts and craving a treat that matched the weather.
I thought I’d come up with something that was the best of both worlds. Something luxurious, but at the same time healthy. By using coconut yoghurt, lots of berries and the amazing Foods of Athenry Gluten Free Bitesize Blondie Biscuits (with only 18 calories each and zero dairy) I was able to do that.

Instructions
Step 1
Not every shop will have the coconut yoghurt, but make the effort to find it along with some super fresh berries.
Step 2
Add the raspberries and a dash of water to a blender.
Step 3
Keep adding small amounts of water until you have a smooth sauce.
Step 4
Start laying up a large glass with sliced strawberries, yoghurt and The Foods of Athenry Gluten Free Bitesize Blondie Shots.
Step 5
Alternate with layers of fresh raspberries. Make sure every layer has biscuits as they bring the whole dessert together with their wonderful crunch.
Step 6
Finish with more sliced strawberries and a generous amount of the sauce poured over the top drizzling down into all the cracks.
Recipes really don’t get any easier than this. The key is splashing out on really good quality ingredients and making this as fresh as possible.
