This Dairygold Deli Feta, Aubergine & Tomato Flatbread Sambo With Sundried Tomato & Basil Sauce Is Divine


  • 3 tomatoes
  • 1/2 aubergine
  • 1 flatbread
  • Handful of feta
  • 1/2 cup of spinach
  • Olive oil
  • Salt & pepper

Here’s the delectable little dish that we recommend you make for tomorrow: a flatbread sandwich with feta cheese, grilled aubergine, roasted tomato and spinach drizzled with Dairygold Deli Sundried Tomato & Basil sauce (that’s got 85% less fat than mayo).

Definitely worth taking a few minutes to make this beaut…


Step 1

Cut tomatoes in half, place on baking tin and drizzle with oil & season with pepper.

Step 2

Roast at 160 degrees for 60 minutes.

Step 3

Slice up 1/2 aubergine, coat with oil and season with salt & pepper.

Step 4

Add some oil to a pan and heat. Cook the aubergine for two minutes on each side.

Step 5

Toast flatbread and cut in half. Add aubergine to the flatbread and then top with the roasted tomato.

Step 6

Crumble the feta on top and layer with the spinach.

Step 7
