How to make a mouth-watering Easter roast using Irish beef

We’re all cooking at home a lot more as of late. And at this stage, you probably feel like getting adventurous and creating the perfectly wholesome Irish roast. So, we’re teaming up with Lidl to show you how to make a seriously mouthwatering Easter dinner using locally produced Irish beef available in Lidl stores.

Whether it’s for you and your partner or you have a full house of hungry bellies, this Easter roast dinner using quality Irish beef and all the trimmings is bound to go down a treat.

To prepare and cook the star of the show, the Lidl Deluxe beef, follow these instructions:

  • Preheat oven to 180°C / Fan 160°C / Gas Mark 4.
  • Brush joint with vegetable oil and sear on all sides in a dry, deep-pan over high temperature until golden brown in colour.
  • Place joint in a roasting tray and season with salt and pepper.
  • Cook in the centre of the oven for the following times depending on preference:
    – Rare: 30 minutes per 500g
    – Medium: 35 minutes per 500g
    – Well done: 40 minutes per 500g
  •  Allow joint to stand for 15 minutes then remove the string before carving.
  •  Ensure food is piping hot and cooked throughout before serving.

For the ultimate Easter dining experience featuring locally produced beef, you’ll want the most delicious trimmings to go with it.

For the most amazing roast potatoes cooked in 45 minutes, follow these steps:

  • Peel 1.5kg of potatoes and cut them in half
  • Add 4 tbsp of olive oil and sea salt
  • Preheat the oven to 220°C/425°F/Gas Mark 7
  • Place the potatoes in a steamer over a pot of boiling water on medium heat until they have softened
  • Place a tray with the oil in the oven for 5 minutes to heat
  • Once cooked, shake to break and soften the edges
  • Tip the potatoes into the tray and roast for 30 minutes, season and toss halfway through

To serve up some super tasty honey and thyme roasted carrots, follow these steps:

  • Grab 500g carrots and add 2 tbsp olive oil, 2 garlic cloves, bashed, 2 sprigs thyme, 1 tbsp honey, sea salt and freshly ground black pepper
  • Preheat the oven to 220°C/425°F/Gas Mark 7
  • Peel the carrots halved lengthways and cut into 5cm chunks
  • Bash the garlic with the side of a knife
  • Toss the carrots in the oil on a tray along with the garlic and thyme. Season and place into the oven for 25-30 minutes until softened and golden
  • Drizzle in honey and return to the oven for another 10 minutes
