Ingredients
- 1 egg
- 4 tbsp cottage cheese
- 3 tbsp oats
- 1 nectarine
- Strawberries
- Yoghurt
It’s safe to say that when the weekend rolls around you want a break from your usual porridge, toast or whatever your rushed work week breakfast consists of.
I usually crave something that feels a bit more indulgent, but often feel guilty if I totally go crazy. These pancakes are the perfect solution as they’re so healthy and packed full of protein which is great for anyone working out. Don’t be put off by that fact that this has cottage cheese in the ingredient list – these genuinely taste unreal.
They take minutes to make and they’re the healthy solution for anyone looking for a weekend breakfast treat.
Instructions
Step 1
Throw your oats, egg and cottage cheese into a bowl (you could add some cinnamon, dried ginger or vanilla extract too if you wanted, but it’s not necessary).
Step 2
Blitz up with a hand blender.
Step 3
Put a little oil on a medium heat and then drop the batter into puddles on the pan. Make sure they’re well spaced so they don’t bleed into one another.
Step 4
When little bubbles start to appear and the batter seems firm, you can flip them.
Step 5
Slice your fruit.
Step 6
Place your pancakes on a warm plate to prevent them from going cold quickly.
Step 7
Top with yoghurt and fruit.
Step 8
Eat immediately!
Quick, easy and delicious… There’s no reason why a weekend treat can’t be good for you!
