This is a deadly recipe to cook when you fancy a serious treat, and it has to be one of our favourite things in the entire world to eat.
It actually only takes about 40 minutes to make, from start to finish, and you’ll be able to tell from the reaction of those you are cooking for just how much people appreciate this type of food.
Definitely one of the nicest things you’ll ever taste… We promise.
Instructions
Step 1
The ingredients are all pretty standard but do make sure to get a ripe avocado. Makes all the difference
Step 2
Chop the potatoes up and throw them into an oven proof dish with cajun seasoning, salt and some oil. Pop them straight into the oven at 200C
Step 3
Get all the ingredients for the guacamole ready
Step 4
Chop them all up and make sure to season with salt. It is the salt and lemon and really draws out the flavour
Step 5
Pop a little pot on to poach the chicken in. Just water in there and have it gently simmering. The chicken should only take about 12 minutes to cook
Step 6
Keep tossing the chips every 10 minutes or so or else they’ll all stick to the bottom of the tray and not cook evenly
Step 7
Pop the chicken into a bowl and using 2 forks shred the meat up
Step 8
Add in some hot sauce. The hotter you want it the more sauce you add. I was using a smokey chipotle sauce
Step 9
Layer the chips on the bottom of the plate. Followed by chicken and then the grated cheese. Pop the whole plate into the oven for about a minute so as the cheese melts
Step 10
Next layer the guacamole on top
Step 11
Finish with the sour cream and bring to the table. Unbelievable scenes
The very best way to enjoy this dish is cooking it for a match, or a movie, inviting loads of friends over – and plonking it in the middle of the table.
