Sweet Potato Soup With Coriander Creme Fraiche

Ingredients
  • 4 Sweet Potatoes
  • 2 Onions
  • 2 Normal Potatoes
  • 2 Cloves Garlic
  • Chicken Stock (Or Veg If You Are A Veggie)
  • Coriander
  • Creme Fraiche

As much as we would like to believe that there is a small bit of summer coming back the sad reality is that it is probably all gone and we need to start varying our diets accordingly. Colder weather means soups for me. When its fucking freezing outside there is no better way to warm up than with a nice warm wholesome soup. This one is delicious, easy to make and is so good looking and tasty that it works just as well for a spot of lunch in the office or for a fancy dinner party where you want to impress people. 7 Ingredients as always and ready in less than half an hour so this is the perfect treat for the colder autumn and winter ahead.

Instructions

Step 1

Really simple ingredients and this is one soup that doesn’t need a shit ton of stuff in it. The potatoes are lovely and sweet as it is.

Step 2

Peel the onions. Even an idiot could do that in fairness so get on with it.

Step 3

Chop the shit out of them and make them as small as possible

Step 4

Peel your 2 normal potatoes and chop them in to small cubes.

Step 5

Peel 2 cloves of garlic. Again if you don’t know how to do this give up and go to the pub for dinner instead.

Chop your garlic up nice and small

Step 7

Heat up a large pan and lash in a good bit of olive oil

Step 8

Lash in the onions, garlic and potatoes. Cook these over a low to medium heat for about 2/3 minutes stirring them the odd time.

Step 9

Peel the sweet potatoes and chop them up. Thats all the hard work done now!!

Step 10

Lash them in to the pan and stir them around for a few minutes.

Step 11

Grab your stock cubes and put them in to some hot water so as they melt. I’m using chicken stock but you could use veggie if you don’t like meat.

Step 12

Pour that in to the soup and cover all the ingredients completely and then turn it up.

Step 13

Chop a good handful of the coriander and and stir it in with a good lashing of the creme fraiche.

Stir it around and set it to one side. Childs play in fairness this is so easy.

Step 15

Simmer the soup for a good 20/25 minutes or until everything is soft.

Step 16

When it is use a food processor, blender or soup gun to blend it until all smooth. The smoother the better.

Step 17

When it comes out it should be like silky velvet. If it is too thick add in a bit more water.

Step 18

When it gets to this stage season it up with a bit of salt and pepper. Taste it each time and see what else you think it needs. Heat it back up and serve. You can always keep this in the fridge and serve it up any time you are hungry. No need to eat it all at once.

Serve it up in a nice bowl. This is just as good for a casual lunch or a fancy dinner party.

Nice big dollop of the coriander creme fraiche in the middle and thats it. Fuck it up on to the table for your guests and they’ll all be as happy as Larry. De fucking licious.

You can see that you don’t need to be a genius to make this soup. It really is that fucking easy to lash together and you’ll look like a superstar chef to any mates who try it. You can lash a large batch of it together in advance as well and just serve it up as you need it with the mixture keeping for a good 4-5 days in the fridge. Hate to say it but with the winters we have you are going to need lots of this stuff to keep you warm.
