This salad is unusual but it’s always a firm favourite. It’s refreshing and it has a lovely sharp flavour enhanced by the fresh mint and Dijon mustard – and best of all, you can throw it together in just a few minutes, with ingredients most of us have knocking about at home.
Turn the tomatoes on their side and cut them into slices about 5cm thick. Arrange in overlapping, concentric circles on a plate.
Trim and clean the spring onions. Cut in half lengthways and then slice on the diagonal. Scatter over the tomatoes.

Whisk all the dressing ingredients together in a jug and drizzle over the salad.
Serve immediately with crusty white bread.
