No 69 – “Clean The Fridge” Special Fried Rice

Ingredients
  • Rice
  • Prawns
  • Ham
  • Eggs
  • Soy Sauce
  • Frozen Peas
  • Onion

Do you ever have that moment where you look into the fridge and even though there are a shit load of ingredients you just don’t have a clue what to make? Well the good news is that there is a solution with the incredible discovery that fried rice is essentially gorgeous no matter what you fuck into it! I’ve lived off this recipe for years and not only is it super healthy but it also always tastes bloody amazing!

Instructions

Step 1

With the exception of the prawns, the chances are you have all this shit laying around in cupboards or the back of the fridge. You can pretty much throw anything in as well, including meat and veg.

Step 2

The key with cooking good rice is to strain it off in advance. I’m using wholegrain rice as I’m being a health freak at the moment, but any will do. Basmati is easiest.

Once the rice is drained cover it with water. I like to have about half an inch (thats what she said!!) covering it.

The key now is to bring the rice up to a boil on full heat. No lid.

Step 7

While that is boiling chop up the ham and the onion into little pieces. Try and not eat the ham. It is nearly impossible and I lost half of mine at this stage!

Step 8

When the rice comes to a boil turn the heat right down to a minimum and cover it with a lid, but allow the steam to come out the side. Most people cook shit rice so this is a really key step!

Step 9

Crack a couple of eggs into a bowl. Don’t need to be a fucking genius for that step!

Step 10

Lash the wok onto a good high heat. When it is smoking hot lash in a tiny bit of oil and fuck in the eggs.

Lash the wok onto a good high heat. When it is smoking hot lash in a tiny bit of oil and fuck in the eggs.

Step 12

Take the egg off the heat when it is all smashed into little pieces. Somewhere between an omelette and scrambled eggs.

Step 13

Chop the prawns into smaller pieces if you need to. That should be all your prep done now and all the hard work over with. Cooking time!

Step 14

Lash the wok onto a high heat. Throw in some oil and when it heats up lash the onion, ham and prawns in.

Step 15

After about 2 minutes of cooking fuck in the frozen peas. Doesn’t matter if they come straight from the freezer.

Step 16

After another 30 seconds lash in the egg. All this should be moving at all times as it could get stuck to the bottom if you don’t.

Step 17

Strain off the rice (which should be nice and fluffy) and lash it in.

Step 18

Now this is fried rice. The clue is in the name. It gets that unique lovely taste by frying it for about 2-3 minutes. Keep it moving though as the bastading stuff will defo stick if you don’t.

Step 19

Lash in a good glug of soy sauce. Don’t be shy

Keep it moving until the rice is all covered in the Soy.

Once you try this recipe and learn the basic principle behind it you are never going to look back. You can mix up the ingredients with different meat, veg or herbs and make it your own. You’ll never walk to the fridge and get that sinking feeling again because you’ll have this bad ass recipe up your sleeve. BOOM.
