Ingredients
- 1-2 Large, Fresh Tomatoes
- 1 Ball Fresh Mozzarella
- Fresh Basil
- Rocket
- Balsamic Vinegar
We can’t get enough of salads at the moment, especially with the weather being so warm and sunny. Caprese salads are served all over Italy and are so simple and delicious. This takes just seconds to make, the better quality cheese and tomatoes you get the better. I always feel like a cheat calling this salad given the amount of cheese in this, especially as it’s usually served without the rocket. But hey, if it’s good enough for the Italians, it’s good enough for me!
Instructions
Step 1
Slice up your tomatoes.
Step 2
Slice up your mozzarella, try and keep the tomato and mozzarella slices roughly the same thickness.
Step 3
Arrange in a pretty little circle, or you could just scatter them on a plate. Makes no difference.
Step 4
Scatter the mozzarella and tomatoes with a little basil. Pop a handful of rocket in the middle and drizzle the whole thing with a bit of balsamic vinegar.
Step 5
Dig in and enjoy!
This whole salad only takes about a minute to make and it’s so satisfying and delicious. It’s a great summer side dish for when you have guests coming over for dinner for dinner and a BBQ, as it looks really impressive despite the minimal effort involved in throwing it together.
