- Sausages (get really good quality ones with a high pork content)

If you’re getting sick of the usual brunch options and want something absolutely delicious for your weekend brunch, that you don’t need to be a professional chef to whip up, then these sausage baked eggs are for you.
Sausage, baked eggs with gooey yolks, cream, butter and toast… The stuff that my brunch dreams are made of!
The majority of the ingredients, I may have forgotten to photograph the bread and S&P.
Grill your sausages until they’re brown all over. You’ll need about 2 big posh sausages per person.
Slice your sausages up into little chunks.
Line a large ramekin with butter (you can use a bowl if you don’t have a ramekin big enough). Then pop in the sliced sausages.
Add in a glug of cream and season with a little bit of salt and pepper.
Crack in your eggs (about two per person), add another glug of cream and sprinkle with another little bit of salt and pepper. Place the ramekin into a brownie tin and pour some boiled water around the ramekin, this will help ensure that is cooks through evenly. Be care moving the tray around with the boiling water, you don’t want to lose your fingers.
Bake them for about 15 minutes at 180C so they’re just set and the yokes are runny, if you like the yolk more set then leave them in for another few minutes.
Toasted buttered soldiers are an absolute must so get them ready. I’m not going to give instruction on how to make toast.
Runny creamy egg and bits of jumbo sausage. Could this be any nicer?
