Ingredients
- 1 7oz steak (per person)
- 2 eggs
- 3/4 baby potatoes par boiled
- 1 tsp chopped chillies.
- A handful of baby spinach
- Olive oil for steak, potatoes & spinach
- Vegetable oil for the eggs.
Gary’s steak and eggs florentine make the ultimate, hearty weekend brunch or a quick and tasty evening meal. It’s a pretty decadent dish that would cure even the worst of hangovers and please the carnivores in your life.
Instructions
Step 1
Get your gear together. Heat a heavy based pan, season the steak.
Step 2
Sear the steak on both sides.
Step 3
Slice the chillies and dice the potatoes.
Step 4
Sauté the potatoes and chillies on the steak pan.
Step 5
Rest the steak.
Step 6
Sauté the spinach on the same pan as the steak & potatoes. Takes 10 seconds.
Step 7
Add the egg to cold vegetable oil. Add a knob of butter should you choose.
Step 8
Gently baste with the cooking oil to ensure it cooks perfectly.
Step 9
Plate. Get stuck in.
This make a perfect quick meal, either a very hearty brunch or a quick and tasty dinner.
