Ingredients
- 2 Chicken Breasts
- 1/2 Cup of Ground Almonds
- 1/4 Cup of Coconut Flour
- Paprika/Dried Herbs (Optional)
- Salt
- 1 Egg
Who doesn’t love chicken fingers? They’re crispy and succulent and often just a shovel for our favourite sauces, but… they’re usually breaded, deep fried and greasy. These ones are crispy, delicious and everything you love about regular ones, without all of the crap!
Instructions
Step 1
Start by combining the ground almonds, coconut flour, salt and seasonings and set them aside. In a separate bowl, whisk the egg.
Step 2
Cut your chicken breasts into ‘fingers’ of your desired size and scatter out the almond mixture.
Step 3
Dip each piece of chicken into the egg and then into the almond mixture to coat it.
Step 4
Heat a good chunk of coconut oil in a pan on high heat. When it’s hot, add in the chicken and cook for a few minutes on each side until they’re nice and crispy and cooked through.
Step 5
Serve and enjoy! I like to have mine with my homemade garlic mayo or sweet chili sauce. This recipe is Gluten Free, Dairy Free & Paleo.
So after a weekend of letting loose you can start the week healthy with this delicious clean chicken finger dish.
