Ingredients
- FOR THE FRIES (Per person):
- 1 medium courgette
- 1 egg
- 1/2 cup of almond flour
- 1/4 cup of coconut flour
- Salt and pepper
- Coconut oil
- Italian herb seasoning
- FOR THE RICE (Per person):
- Half cup basmati rice
- 2 bay leaves
- 1⁄4 teaspoon saffron thread, crumpled
- 1⁄4 cup chopped cashews
- 1⁄4 cup raisins
- 2 tablespoons butter
- FOR THE CURRY:
- 1 tbsp coconut oil
- 200ml coconut milk
- 1 small onion
- 1 clove garlic
- 1 tsp ground coriander
- 1 tsp ground cumin
- 1/2 tsp ground turmeric
- Small piece of root ginger
- 1 tsp chilli powder
The 3-in-1 is an utter abomination, as we explained yesterday.
But does it have to be? We threw together this recipe to shine an artistic light on one of the darkest corners of the food world – and man, is it a delicious cacophony of flavouring that you absolutely need to try.
Instructions
Step 1
Kick off with the courgette fries. Whisk one egg and add a dash of salt and pepper, and in a separate bowl, mix up the coconut flour, almond flour and herbs/paprika.
Step 2
Chop the courgette into thin strips, and then cut each strip in half.
Step 3
Dip each piece into the egg mixture and then coat it in the almond/coconut mixture.
Step 4
Add a good chunk of coconut oil to a pan on high heat and let it heat up, then add the courgette to the pan.
Step 5
Let it sizzle for about 3 minutes and then flip them so that they brown evenly. When they’re nice and crispy, transfer them to a baking sheet and bake at 220C for about 10 minutes, flipping them half way through.
Step 6
Take them out, sprinkle them with some salt and eat hot straight from the oven with your favourite sauce (they’re unreal with garlic mayo)!
Step 7
Now for the curry – lash the chopped garlic and onions into a pan with the oil and let them soften. Don’t burn them, for feck sake.
Step 8
Stir in all your spices, absorb the INCREDIBLE smells that are filling your kitchen right now, and then once it’s all mixed up over a gentle heat, stir in the coconut milk and bring it to the boil.
Step 9
Rice time. Rinse your rice and throw it into a saucepan along with everything apart from the butter and cashew nuts. Once it’s cooked, add them in – and oh MAN, is that going to taste pretty special.
Step 10
Lash it all together on a plate – or a foil tray for the laugh – and BOOM. The gross, ugly 3-in-1 you see below is dead.Long live the Hipster 3-in-1!
