- 1 banana
- 2 eggs
- Coconut oil
- Raw honey
It’s hard to believe that pancakes could ever be healthy, or made without lots of fluffy flour. But it’s true, Paleos can enjoy health freaky pancakes too that taste delicious! These are made with just banana and egg, and topped with whatever you fancy. We decided to top ours with strawberries and honey but you can top yours with anything, so get the imagination going. They take no time at all to make, and you can have them every morning if you like without having to worry about the guilt.
Blitz together your banana and eggs with a hand blender until totally smooth and combined.
On a non stick pan tip in a tablespoon of coconut oil and let it coat the entire pan. Then add on two ladles of pancake batter. You need to be careful with these as they’re delicate and the natural sugars in the banana mean that they can burn easily.
After a few minutes when the pancakes are browned on both sides flip them out onto a warm plate. You’ll get about 6 pancakes out of the mix so keep them covered in a warm oven while you fry the rest of the batter.
Chop up your strawberries.
Drizzle your pancakes with some raw honey
Top your pancakes with the strawberries.
Plate up and….
… Dig in!
