Super-Healthy Gluten-Free Avocado Zoodles That Sing With Flavour – In Just 7 Easy Steps

Ingredients
  • 2 courgettes
  • 150g bacon pieces
  • Juice of 1 lime
  • Juice ½ lemon
  • 2 avocados
  • 2 cloves of garlic, crushed
  • 1/2 of a red chili, finely chopped
  • 1 tbsp coconut oil
  • Large handful of pine nuts

This dish is super simple, full of flavour and ready in no time… a perfect way to kickstart your week, particularly if you’ve been a bit bold over the weekend!

You will need a spiralizer to create the zoodles – but hey. What kitchen doesn’t have one of those in this day and age?

Instructions

Step 1

Begin by spiralizing the courgettes to create your zoodles – a portmanteau of zucchini noodles, in case you were wondering.

Heat a small saucepan with half-tablespoon of coconut oil and fry off the bacon.

Once they’re thoroughly cooked, remove ’em from the pan and admire them in all their sizzling goodness.

In a small bowl, mash the avocado (you’ll need one that isn’t rock hard) and combine with the garlic, chilli and lime juice. Reheat the pan and gently warm the avocado for 3-4 minutes.

In another pan heat the remainder of the coconut oil. Sauté the courgettes for two to three minutes before adding the lemon juice, then continue to cook and remove from the heat when they’re all cooked up to your liking.

Toast the pine nuts in a small dry pan, and watch you don’t let them burn.

Plate up with the zoodles, pop the warm avocado on top with the bacon, sprinkle on the pine nuts, serve… and enjoy!
