Apparently We’ve All Been Making Mashed Potato Wrong Our Entire Lives

We don’t want to alarm you, but it seems that we, the Irish, the potato masters, have been doing it all wrong.

Madness.

Let’s run through very quickly how we make our mash…

We boil the potatoes in water, drain ’em, and mash in a healthy mixture of milk and melted butter. Sounds perfect, right?

NOPE.

Food Network chef Tyler Florence spoke to Popsugar and revealed that we really shouldn’t be boiling potatoes in water at all.

“Potatoes have a really delicate, beautiful minerality to their flavour profile, and when you cook potatoes in water and you pour that water down the drain, you’ve extracted all the flavour of the potato.”

Here’s what you should do…

Chop up the raw potatoes and cook them IN the cream, milk, and butter.

That way they absorb all the creamy flavour, instead of being soaked in the water.

We’re gonna try this tonight for sure.
