  • - 1 courgette
  • - 20g flaked almonds
  • - 1 red onion
  • - 4 piccolo tomatoes
  • - ½ bag of rocket
  • - 2 TSP olive oil
  • - Salt & pepper
  • - Dairygold sundried tomato & basil sauce

Today we're going to show you how to make a Mediterranean vegetable wrap with rocket & toasted almonds drizzled with Dairygold Deli Sundried Tomato & Basil sauce (which boasts a whopping 85% less fat than mayo).

Prepare to drool...


Step 1

Chop up courgette, onion and tomatoes

Step 2

Add oil to pan and fry courgettes for 5 minutes, season with salt and pepper

Step 3

Toast flaked almonds in oven at 180 for 12 minutes

Step 4

Heat the wrap in the microwave or oven

Step 5

Fill wrap with rocket, roasted courgettes, onion and tomatoes

Step 6

Sprinkle the toasted almonds on top

Step 7

Drizzle on Sundried Tomato & Basil sauce
