This Avocado, Roasted Peppers, Feta & Smokey Chipotle Sandwich Is Divine

Ingredients
  • 4 slices sourdough
  • 1/2 cup roasted red peppers
  • 2 ripe avocados (pit removed)
  • 1/4 cup crumbled feta
  • Lemon
  • Salt
  • Pepper
  • Dairygold Deli Chipotle sauce

We all know that feeling of reaching for your packed lunch only to feel zero enthusiasm; it’s moments like this that you fall into the trap of wasting money on lunch out.

That’s a problem of the past, however, as we’re helping you liven up your lunchtime with just the thing you need: a hearty, yet fancy, sandwich with fresh vibrant ingredients.

After a hard morning’s work, you need something fresh, substantial and tasty — ham ‘n’ cheese just isn’t gonna cut it.

With that in mind, today we’re going to show you how to make sliced avocado with roasted peppers and crumbled feta cheese on sourdough drizzled with Dairygold Deli Chipotle sauce (and with 85% less fat than mayo, this sauce is the real hero of the meal).

Once this lunchtime treat is part of your repertoire, you won’t know how you got on without it.

Instructions

Step 1

Preheat the oven to 180 C. Chop up your peppers into strips.

Step 2

Drizzle olive oil onto a roasting tray. Add peppers to tray, season with salt & pepper and roast for 15-20 minutes.

Step 3

Slice up avocado in a bowl and season with salt. Squeeze the juice of one lemon onto the avocado.

Step 4

Toast the sourdough.

Step 5

Assemble the dish by placing the roasted peppers on top of the bread. Next, place the avocado on top, followed by the crumbled feta cheese. Top it all off with a drizzle of Dairygold Deli Chipotle sauce.

This is what you can whip up when you just take a minute to make lunch.
