In fairness, it’s the season for it.
If you’re trying to figure out your brunch plans for this weekend and in the mood for something with an ~autumnal~ twist, we feel you. Leaves are falling, the blanket scarves are out and the general consensus is that everything tastes better with pumpkin in it. Luckily, Cafe La Coco in Kilkenny City know the suss. They’ve taken the pumpkin spice theme and ran with it, and the results are pretty magical. Pancakes are already the ultimate weekend comfort just the way they are, but we certainly wouldn’t say no to this seasonal twist:

Meet the pumpkin buttermilk stack with poached pears, orange and pumpkin mascarpone, maple syrup and pecans. I feel like this dish is about to drop its skincare routine, and I’m 100% here for it.
In the dessert department, there’s this pumpkin spiced cheesecake which honestly just speaks for itself.
