We’re putting this pineapple toastie in Laois on our must-try list

Sorry, I of course meant to say FINE-apple. Appropriate title for this fruity, flavourful sambo.

Hikers & Bikers, the dotey green food truck that’s been keeping the good people of Clonaslee fed and watered since this summer has just come up with the toastie of our dreams. If you’re an anti-pineapple on pizza type, now is the time to avert your eyes. If you’re obsessed with the pineapple/cheese combo, join us on this zesty food journey.

The fineapple toastie is made up of spicy homemade pineapple relish, balanced out with creamy brie and dressed with fresh, peppery rocket and candied walnuts. Please, enjoy the making of this sweet and savoury delight below:

Shout out to the seasonal leaves in the background also. We appreciate an autumnal touch here at Lovin. You can pick up one of these bad boys at Hikers & Bikers on Saturdays and Sundays, from 10am til 3pm. Paired with a delish Anam coffee and followed by a homemade treat, it’s an absolutely epic meal.
